Black Forest Roll Cake – A Chocolate & Cherry Delight

### **Instructions**
#### **Step 1: Preheat & Prepare**
1. Preheat your oven to 350°F (175°C).
2. Line a 10×15-inch jelly roll pan with parchment paper.
#### **Step 2: Make the Cake Batter**
1. Beat the eggs and granulated sugar in a large mixing bowl until the mixture is thick, pale, and tripled in volume (about 5 minutes).
2. Sift together the flour, cocoa powder, baking powder, and salt in a separate bowl.
3. Gently fold the dry ingredients into the egg mixture, ensuring not to overmix.
4. Spread the batter evenly in the prepared pan.
#### **Step 3: Bake the Cake**
1. Bake for 12-15 minutes or until the cake springs back when lightly touched.
2. While the cake bakes, dust a clean kitchen towel generously with powdered sugar.
3. Remove the cake from the oven, invert it onto the towel, and peel off the parchment paper.
4. Roll the cake with the towel (from the shorter side) and let it cool completely.
