Berry Swirl Cheesecake Bites

12 ounces cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs, at room temperature
1/4 cup sour cream

For the Berry Swirl:

1/2 cup fresh or frozen berries (strawberries, raspberries, or blueberries)
2 tablespoons granulated sugar
1 teaspoon lemon juice

How to Make Berry Swirl Cheesecake Bites
Step 1: Prepare the Berry Swirl Sauce

Cook the Berries: In a small saucepan, combine the berries, sugar, and lemon juice. Cook over medium heat, stirring frequently, until the berries break down and the mixture thickens (about 5–7 minutes).
Blend and Strain: Use an immersion blender or regular blender to puree the mixture. For a smooth swirl, strain the sauce through a fine mesh sieve to remove seeds. Let it cool to room temperature.

Step 2: Make the Crust

Preheat the Oven: Set your oven to 325°F (160°C). Line a mini muffin tin with paper liners or lightly grease it.
Mix the Crust Ingredients: In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture resembles wet sand.
Press into the Tin: Scoop about 1 tablespoon of the crust mixture into each muffin cup. Press down firmly with the back of a spoon or your fingers to create an even layer. Bake for 5 minutes, then let cool while you prepare the filling.

Step 3: Prepare the Cheesecake Filling

Beat the Cream Cheese: In a large mixing bowl, beat the softened cream cheese with a hand or stand mixer until smooth and creamy.
Add Sugar and Vanilla: Mix in the sugar and vanilla extract, beating until well combined.
Incorporate Eggs: Add the eggs one at a time, mixing on low speed after each addition.
Fold in Sour Cream: Gently stir in the sour cream until the filling is smooth and uniform.

Step 4: Assemble the Cheesecake Bites

Fill the Muffin Cups: Spoon the cheesecake filling over the crusts, filling each cup about 3/4 full.
Swirl the Berry Sauce: Add a small dollop of berry sauce on top of each cheesecake bite. Use a toothpick or skewer to gently swirl the sauce into the filling, creating a marbled effect.
Bake: Bake the cheesecake bites for 12–15 minutes, or until the centers are set but still slightly jiggly.
