Ingredients:
Chicory 800 gr
EXTRA VERY OLIVE OIL 4-5 tablespoons
GRATED PARMESAN 30 grams
SEA SALT to taste
PÉPÉ to taste

How to prepare fried radicchio:
Step 1
Cut the radicchio head into several parts. To reduce the bitter aftertaste, you can soak it for half an hour in water acidified with vinegar or lemon juice.

Wash it well and then let it drain
