Baked Greek Lemon Chicken

Preparation:

  1. Place the chicken in a large bowl or ziplock bag.
  2. In a small bowl, mix together all remaining ingredients until well combined.
  3. Pour the marinade over the chicken, ensuring it is well coated. Cover the bowl or seal the bag.
  4. Refrigerate and let the chicken marinate for 2-6 hours.
  5. When ready to bake, preheat the oven to 350°F (175°C).
  6. Arrange the marinated chicken in a large baking dish and pour the marinade over the top.
  7. Bake the chicken for 40 minutes, or until the internal temperature reaches 165-175°F (74-80°C). For extra color, broil for the last 2-3 minutes.
