Directions:
Preheat the oven to 180°C (350°F). Butter a 20 cm diameter cake tin.
In a large bowl, mix the almond powder, sugar, eggs, melted butter, vanilla extract, baking powder and salt. Mix until smooth.
Incorporate the apple cubes into the mixture and gently mix.
Pour the mixture into the prepared tin and smooth the top. If desired, sprinkle with flaked almonds for a crunchy touch.
Bake for 30 to 35 minutes, or until the cake is golden and a knife inserted in the centre comes out clean.
Allow to cool before removing from the tin and serve warm or at room temperature.
