Lemon Italian Meringue Tart
Ingredients (Serves 8-10)
For the Tart Crust:
1 1/4 cups (160g) all-purpose flour
1/4 cup (50g) granulated sugar
1/2 cup (115g) cold unsalted butter, cubed
1 egg yolk
1-2 tablespoons ice water
For the Lemon Filling:
1 cup (240ml) fresh lemon juice
1 tablespoon lemon zest
3/4 cup (150g) granulated sugar
4 large eggs
1/2 cup (120g) unsalted butter, cubed
For the Italian Meringue:
3 egg whites
1/4 teaspoon cream of tartar
3/4 cup (150g) granulated sugar
1/4 cup (60ml) water
