Ingredients for 6 to 8 people:
30 sponge
fingers Chocolate biscuit: 3 egg yolks
75 g sifted flour
30 g cocoa powder
120 g egg whites
100 g caster sugar
Caramel Bavarian: 3 sheets of gelatin
300 g whipping cream
3 egg yolks
110 g caster sugar (90 + 20)
a little water
30 cl milk
Caramelized pears:
1 tin 4/4 pears in syrup
50 g caster sugar
1/2 vanilla pod
Caramel pieces:
150 g caster sugar
30 g butter
